The two peas love Alfredo sauce,
but not the fact that a serving (1/2 cup with noodles) is usually 600+ calories.
So, the wife whipped up this version instead, and it tastes pretty good.
Ingredients:
- 2 Cups Light Original Soy Silk (you can try using almond milk)
- 1 tbsp Butter
- 6-8 tbsp Parmesan Cheese (based on using the powder kind; you can also grate your own)
- 2 tbsp corn starch (thoroughly mixed with 2 tbsp cold water)
- Black pepper, salt, and garlic to taste
- Dash of ground nutmeg
Instructions:
- Sautee 1-2 cloves of garlic in butter. (You can use garlic salt or garlic powder to flavor the sauce instead).
- Add soy milk to pan with butter, and heat it until the milk starts bubbling.
- Add parmesan cheese one tablespoon at a time and mix thoroughly with a wisk into the milk.
- Add the corn starch mixture and thoroughly mix into the milk and cheese sauce immediately.
- Allow sauce to thicken and simmer over medium to low heat for about 3-5 minutes.
- Add seasonings to taste and the dash of nutmeg.
The recipe serves 4 people.
With a serving of noodles, the total calorie count is about 400-440 (depending on whether you use 6 or 8 tbsp of parmesan cheese).
